What to Do With Asparagus While It’s Here

Asparagus season doesn’t last very long around here.

One minute it’s cold and raining every other day, then suddenly everybody in Sunderland is throwing asparagus on the grill.

Most of the time we keep it simple. Olive oil, salt, maybe lemon.

Still, we ended up looking around for asparagus recipes and found a few worth saving while the season’s still going.

The pasta recipes were the first rabbit hole.

The Modern Proper has a lemon asparagus pasta that looks pretty easy to pull together on a weeknight. Delish has a similar version, but they char the asparagus in the pan first.

Ina Garten has a roasted asparagus version of cacio e pepe that’s mostly butter, cheese, and black pepper. Not complicated.

The tart recipes also looked good.

What’s Gaby Cooking has one with puff pastry and cheese that looks like something you’d bring to a cookout. Seasons and Suppers has another version with cheddar cheese sauce that goes a little heavier.

Then we got into risotto.

The asparagus risotto from What’s Gaby Cooking looks manageable if you’ve never made risotto before. The Kendall-Jackson version adds Meyer lemon and mascarpone.

And the grilled asparagus flatbread from Real Simple with hot honey, ricotta, and arugula looks like a pretty good excuse to keep grilling.

That’s the nice thing about asparagus season.

You don’t really need to do much to it.

And while the season’s here, Warner Farm asparagus is coming into Millstone Market daily from right across the street.
